A friend of mine first told me about the fresh mozzarella at Costco, and I was more than a little skeptical. One day, though, while shopping, I decided to pick some up. After all, my family goes through a ton of it, and how bad could it be? Turns out, not bad at all. In fact, Costco’s mozzarella is great!
Here is a great winter salad that uses fresh mozzarella, and is the perfect alternative to Caprese when tomatoes aren’t in season. I recently made it for the adults at my 5-year-old’s birthday party.
Serves 8
4 Mozzarella balls (best quality)
8 slices of Prosciutto de Parma*
8 large pieces of arugula
1 teaspoon of black peppercorns
Sea salt
Olive oil – finishing or best quality
*Have your butcher slice super thin slices (try not to use the pre-sliced package kind)
Remove the mozzarella from its liquid and leave in a bowl on the counter while you prepare the other ingredients.
In a mortar and pestle, coarsely pound the pepper. Slice the mozzarella balls in half and wrap with prosciutto. Lay each wrapped half on a thin bed of arugula. Drizzle with olive oil, ground pepper, and Salt (in that order), then serve.
