On a hot summer day it is tough to beat this old school cocktail. This thirst-quencher makes any heat wave bearable. A white port and tonic has some interest and depth, but is super fresh and easy.
With only two ingredients and a garnish, it is the perfect antidote to muddling and mixing overload— in the heat of summer, who wants to spend any more time mucking around than you have to?
White port is lighter and more refreshing than its ruby counterpart. The combination with tonic is a classic cocktail and totally worth a round (or two!). Here, I used Warre’s White Port, check your local wine store or grocery store, you can find decent bottles in the $15 range.
It’s worth seeking out organic tonic because it doesn’t have high fructose corn syrup, most bottle shops carry a good range of options these days.
Makes 1 serving
1 ounce white port
3 ounces organic tonic
Garnish of seasonal fruit
Serve in a tall glass over ice and garnish with seasonal fruit (citrus slices or peaches).
