The starting point for this holiday cocktail was my new Bearss lime tree in the backyard. I had no idea there was such a difference between limes, but at first squirt of the tart juices they were calling to me “make a cocktail! make a cocktail!”. The limes, spicy ginger-y notes of Christmas and bourbon make for a delicious seasonal drink. It’s kind of a glorified version of a Seven and Seven, which is alright in my book. Cheers!
Makes 2 drinks
2 ounce Woodford Bourbon
2 ounce ginger simple syrup (see recipe below)
½ ounce lime juice
Sparkling water
Ginger Simple Syrup
5 slices of fresh ginger
1 cup sugar
2 cups water
Simply heat the ingredients in a pot on the stove until the sugar crystals dissolve.
Garnish
Lime slices
Shake simple syrup, bourbon and lime juice for 7 seconds. Pour into glasses and top with a splash of sparkling water. Garnish with lime slices and pomegranate seeds.
