Why is it that we always seem to eat only the first half of a watermelon? The other half sits in the fridge, eventually ending up in the compost pile. So, I tried this drink out to salvage that second half. Well that, and wanting to make the girls a special drink while we were enjoying our wine. Less whining = more wining. This round of tinkering turned out to be a refreshing success—thus, watermelon punch was born. There’s no booze in it, but boy it’d be good if there were!
Makes approximately 6-8 glasses
1/2 small watermelon, approx. 4 cups
1/8 cup sugar
Juice of 1 lime, plus more for garnish
4 cups water
Chop up the watermelon and put chunks in a clean bowl or pitcher, followed by the sugar, and lime juice. Mash the watermelon with a spoon or potato masher until the meat of the melon (I know …that sounds funny) is flattened and the juice is extrapolated. Next, add the water and give it a stir. Strain into another pitcher and serve over ice. Garnish with lime.
