It’s hard not to be on the Brit bandwagon right now— between the Queen’s Diamond Jubilee, London hosting the summer Olympics, Wimbledon and the “sexy, new” Kate, I’m crushing on the latest wave of British invasion.
But, I’ve always had a thing for life across the pond because of my Scotsman dad. We spent many a summer traveling to Scotland and England, and I’m pretty sure those trips were the source of devotion to bangers and mash (this was way before London became a renowned food city).
I am loving these cocktails as we roll into summer; it’s perfect for a round of cricket, croquet or oh, bloody hell…even watching Nascar. The only problem with this refreshing cocktail is that it’s hard to stop at just one. It makes good use of what’s growing currently in your summer garden. I like to call this lunch in a glass, I mean is there anything better on a hot day than crunchy cucumber spears soaked with gin and co.? Head face first into this very British summer and tie one on English style.

Serve over ice:
1 part Pimm’s No. 1
2 parts Gingerale
1 part sparkling water
Squeeze of lemon wedge in each glass
Add in any assortment of the following:
Orange slice
Cucumber spear (Persian cucumbers, quartered cut into spears)
Fresh mint
Strawberry
Twist of a lemon peel
